Sweet Potato Fries!

At one point or another, we all have had french fries. At times, they can be very oily. How about a healthy alternative? Sweet potato fries – once you try these, you may never go back to your old frech fries again! Note: for a dipping sauce, combine ketchup and hot sauce – this will give the fries an extra kick.
Ingredients:

2 large sweet potatoes/yams
1 tsp. canola oil or vegetable oil
Pinch of salt
Cooking spray

Directions:

Pre-heat oven at 450 degrees and spray baking sheet with cooking spray.
Peel and wash sweet potatoes/yams.
Cut into French fries.
In a medium sized bowl combine sweet potatoes/yams, oil and salt and make sure fries are coated.
Spread fries evenly on baking sheet and bake for 15 - 20 minutes until tender and slightly brown.
Yields 2 servings.
